Meet Teresa Lopez and Scott Collinge, the couple behind Proper Tacos. Teresa grew up surrounded by the vibrant, warm kitchens of Mexico, where meals were a family ritual. Scott, a born-and-bred Brit, fell in love with both Teresa and her food. Together, they’ve worked tirelessly, often through long nights and early mornings, to bring something rare and special to London: real Mexican tacos, made properly.
